Set within a warm, Mediterranean climate of mild winters and sun-drenched summers, our permaculture regenerative farm thrives as a vibrant mosaic of resilient plant guilds and diversified food systems. Designed to follow the rhythms of the land, the farm integrates drought-tolerant species, deep-rooted perennials, and culturally important crops that flourish under seasonal dry spells.

At the heart of the farm, terraced food forests and polyculture beds interweave aromatic herbs such as rosemary, thyme, oregano, sage, lavender, marjoram, savory, and bay laurel. These fragrant allies attract beneficial insects, deter pests, and provide a steady harvest for culinary, medicinal, and artisanal uses. Mediterranean culinary staples like fennel, coriander, chamomile, and lemon balm further diversify the herbal understory.

Schisandra berries

A five-flavor berry used in Traditional Chinese Medicine. Rich in antioxidants and adaptogens that support the liver, stress response, and overall vitality.

Olives

Packed with healthy fats and polyphenols that support heart health, reduce inflammation, and nourish the body at a cellular level.

Figs

Naturally sweet and mineral-rich, high in fiber, calcium, and antioxidants. Loved for supporting digestion and steady energy.

Aronia berries

One of the highest antioxidant fruits on earth. Supports immunity, circulation, and cellular repair.

Elderberries

A powerful immune-supporting berry with antiviral and anti-inflammatory properties used for centuries in folk medicine.

Sea buckthorn berries

Bright, nutrient-dense berries loaded with vitamin C, omega fatty acids, and skin-supportive compounds.

Mushroom logs

Home to medicinal mushrooms like shiitake and oyster. Known for immune support, gut health, and potent antioxidant activity.

Linden Trees

The leaves and flowers are used for calming teas rich in antioxidants. Known to soothe the nervous system and support heart-centered wellness.

Water is conserved through contour-aligned swales, olive-grove terracing, mulch-heavy soil building, and greywater-fed orchard pockets. Deep-mulched basins cradle species like avocado, almond, quince, and loquat, all forming layered canopies that shelter understory herbs and groundcovers.

Animals—chickens and ducks—cycle nutrients back into the soil, manage pests, and help maintain orchard floors. Composting systems, worm farms, and fungal-rich mulch create a living soil sponge that absorbs winter rains and releases moisture throughout the dry season.

Powered by solar energy and guided by regenerative design, the farm produces abundant food, medicine, and resources while restoring biodiversity, strengthening community resilience, and demonstrating a climate-adapted model for Mediterranean ecological farming.

Before it’s boiled down into syrup, we collect this pure sap directly from the tree and bottle it fresh. It’s light, crisp, and delicately sweet, offering the clean taste of a forest coming back to life.
